Sometimes pretty frosting and decorations can be misleading.
Hmmmm I'm not sure what to say about my Mom's cake. I do think it looked nice and it gave me few other ideas while I was making it but the actual cake part - I didn't love. I used the red velvet cake recipe from a fellow blogger and I just didn't like it so I'm not going to share it. The main reasons why I didn't like it were because it wasn't very sweet and I could sort of taste the red food coloring. At first I thought maybe all the red #5 was messing with my head and making me think I was tasting it when I really wasn't - but either way it didn't leave me with a good taste in my mouth - literally.
But here's what I did learn.
1. Whipped cream makes a great and pretty frosting.
2. The filling: fresh strawberries, mixed with a half a cup of sugar and whipped cream makes a great cake filling. I will definitely use this easy and good filling again.
3. For an easy strawberry short cake next time I'm going to either make or buy a pound cake, cut it in half, add the strawberry filling in the middle and frost the whole cake with whipped cream. Add a few strawberries on top and serve. It would be prettier than typical strawberry shortcake but essentially the same amount of work.
4.The filling makes a lot extra so I'll definitely serve it on the side next time. I made the filling for my Mom's cake and I ended up with a pretty large bowl of strawberries and whipped cream left over. I should have just brought it with me and let people put an extra dollop on the cake. Because basically it just sat in my refrigerator and went to waste. Oh well - lesson learned.
