It has been a rough week over here. What started as the little one getting sick quickly morphed into Branko getting sick and then ultimately, I met my own demise. I won't go on and on about it but needless to say it wasn't pretty.
Last night, with my temperature flaring and Branko and Lily still not feeling the best, I decided to dig deep and make dinner. I had read about this recipe over on Food For My Family - but I did it totally different based on what was in my refrigerator. I had some leftover spaghetti sauce, italian sausage, mozzarella cheese and incidentally - Naan bread. Earlier in the week I had been seduced by the Costco sample lady who was handing out little pieces of naan with cheese on it. I'm always a sucker when Lily loves to eat something and she seemed to really like the naan bread - so I threw a big bag o'Naan in my basket and went on my way. Of course, she refused to eat any of it once we got home. So I had all this Naan in my refrigerator and this recipe sounded really yummy. Here's how I made it:
Ingredients: spaghetti sauce, 2 cups mozzarella cheese, 1/2 cup parmesan cheese, 1/2 lb italian sausage, olive oil, 3 large pieces of naan bread.
Directions: Preheat oven to 400 degrees. cook 1/2 lb of italian sausage in frying pan, brush naan bread with olive oil, spread sauce on top, the cooked italian sausage, sprinkle parmesan and mozzarella cheese all over. Cook for 12 minutes. We used a pizza stone - if you do that make sure to preheat the oven with the stone in it and then place pizza on top and cook for 12 minutes. It works great when the stone is super hot before cooking.
Optional: Next time I make this - when I'm feeling better - I'm going to chop fresh garlic and basil and mix with olive oil and spread that all over before the sauce. I think it will be even better. I'm going to give these a try on the grill this summer and see what happens.
