My poor baby is sick. She is a weepy, whiny and watery mess of a child right now. Yesterday we were trapped inside by her illness and the rainy weather outside so it seemed like a perfect day to make a yummy chocolate cake. No plans to go anywhere. Nothing to do except wipe noses and refill sippy cups. I'm not sure how the cake made Lily feel but it sure made me feel better.
If you're in my neighborhood today, stop over for some cake. I fear what will happen if I am stuck in my house for another day with this cake. I already ate a piece for breakfast.
The cake itself has a really nice flavor. It tastes sort of lemony even though there isn't anything lemon in it. Not sure why that is. It's the only cake that Lily actually eats the cake and not just the frosting. I used this Belgian chocolate that B found at Trader Joe's and it is heavenly. A few notes (mainly to myself to remember): make the frosting first. It's time consuming and I always forget that part because the cakes are so easy to make. So then I make the cakes, and I talk on the phone, wash all the dishes and do other things, all the while thinking that all I have left to do is frost the cake. Then it's 5:00 and I get started on the frosting - and it takes a long time and uses lots of dishes. Then at 7:00, I have another sink full of dishes and all the time I was going to spend decorating the cake, I no longer feel like doing. That's why I recommend making the frosting first, maybe even the day before and then make the cakes. The cakes are cake.
