I came up with this recipe as a way to get Lily to eat spinach. I knew she loved macaroni and cheese (who doesn't) so I thought if I made the spinach really creamy and cheesey maybe she'd eat it. She loves it and I love knowing she's getting two huge handfuls of spinach when she eats it (and she doesn't even know it) HA!
Melt 1tbl butter in sauce pan
Add 1 tbl flour
Stir for one minute or so. Stir constantly so it doesn't burn. I like to stir it with a fork so you can get all the flour mixed in with the butter.
Let this simmer until it gets nice and creamy. Add 1-2 handfuls of chopped spinach, depending on how much you want. Stir mixture until spinach is wilted (about 3 minutes or so). If it's too thick add a little more milk. Add 1/4 tsp salt or as much as you want.
Add 1 cup of elbow macaroni noodles to boiling water. Strain.
Mix elbow macaroi with spinach mixture.
Add parmesan cheese and mix so it is cheesy throughout. Then put a little more on top for good measure :-)
*when she was a baby, after I would put the spinach in with the milk mixture I would put it in a food processor. This would probably be a good idea too if you really wanted to hide the spinach.
