2 leeks cut length wise. Clean well since leeks are dirty little buggers.
Cut leeks into thin strips. Meanwhile heat 4 tbl spoons of better in a large pot. You can use less butter if you want to save calories but butter will make it better. Dice 5 small potatoes or 3 large russet potatoes and add to the pot.
Saute leeks and potatoes together for 2 minutes. Add 4 cups of chicken stock and cook for 20-30 minutes on medium heat. Add more or less chicken stock depending on how thick/thin is preferred. Or replace some of the chicken stock with cold water. Add pepper to taste. Crumble 5-6 pieces cooked bacon on top. (Photo of potato/leek sauted in butter)
Mash the potatoes a littlebit to make it creamy. That's it. Enjoy!
* Prepare everything to taste. You should not need to add salt because the bacon will make it plenty salty. If you don't have bacon just add some salt to taste.
