I know kids love chicken fingers, chicken nuggets and any sort of globbed up, deep fried chicken part. But ever since I watched "Supersize Me", I can't even imagine feeding Lily ground up chicken parts from a genetically motifed chicken. So I created this recipe (which is just a basic, simple fried chicken) and she loves it, I love it, Branko can't keep his paws off of them and these chicken fingers are great to have on hand for a sandwich or to put on top of a salad too.
Here's what you need:
2 chicken breasts
1/3 cup of flour
1/4 cup of parmesan cheese
1 cup breadcrumbs
Canola oil (just enough to fill the bottom of the pan + 1/4 inch up the side)
Directions: Mix parmesan cheese and breadcrumbs together in a bowl set aside. Stir egg yolk in another bowl set aside. Pour flour in another bowl set aside. Heat up the oil. Slice chicken breasts into thin chicken strips. I can usually get 12 strips out of 2 chicken breasts. Dredge chicken strip in flour, then egg yolk, then breadcrumbs/parmesan mixture and place in hot oil and fry. You can usually (depending on the size of your pan) get about 4-5 strips in the pan. Once they are golden brown on one side, flip over and fry the other side. Continue until all strips are done and Enjoy!

*A few things I love are: Costco organic chicken breasts. 6 breasts for 17.99, Trader Joe's organic bread crumbs $1.79. otherwise Bella bread crumbs are great too. I tried whole wheat bread crumbs once and they didn't taste very good.
